Long Run Rounds Recipe


Sista T pointed out that I didn't actually post the recipe so here it is. It came from iRun magazine about a year or so ago. They replaced the energy gels I used to buy for long runs and races. Easy to throw in the pack and tastier too. I almost fell over after seeing Daughter Elder eat 4 of them. She promptly threw out the 5th one once she found out they had raisins in them. She's 14. No need for further explanation here.

MIX TOGETHER:
1/2 cup butter, 1/2 cup brown sugar, 1/4 cup peanut butter, 2 eggs

ADD:
1/2 tsp. baking powder, 1 tsp. vanilla, 1/2 tsp. cinnamon

SLOWLY ADD:
1 cup whole wheat or buckwheat flour

THEN ADD THIS:
1 cup dark chocolate chips, 1 cup chopped pecans, 3 cups slow cooking oats.
*I use 3/4 cup of whatever nuts I have on hand and 1/4 chia seeds instead of the pecans because somebody keeps eating them. Throw in some raisins if you like*

ASSEMBLY:
Roll about a golf ball size in your hand and place on greased cookie sheet.
Bake 350F 12-15 minutes.
Yields: A LOT
